We want to share the festive cheer to celebrate Level 3 Professional Cookery student, Mikaela Humble, making a star appearance in appetite magazine’s ‘The 12 chefs of Christmas’ feature.
Appetite magazine is published eight times a year and is dedicated to the taste of the North East of England – readers indulge in the food and drink that is grown, made and enjoyed here in the North East.
The annual go-to guide shares festive tips, advice and recipes from 12 new top chefs, foodies and talented cooks. At the top of the list, our very own Mikaela teaches you how to take your roast potatoes to the next level.
Mikaela progressed from Level 1 to Level 3 at NCD, she said:
“My three years at NCD have been nothing short of enjoyable so far! Everyone has been so welcoming which was great as when I started I didn’t know anyone. NCD helped me gain the practical skills I needed to secure my current job at the Charred Lobster in Hexham. Having worked in a real kitchen environment meant I was able to deliver the standard they were looking for.”
Mikaela joined the team at the Charred Lobster before they opened which meant she was able to gain an incredible amount of knowledge, as well as transferable skills such as managing her time efficiently in a fast-paced kitchen. Mikaela has also had the invaluable experience of helping to develop recipes and learning to cook using expensive ingredients that leave no room for errors.
She continued:
“I have worked at the Charred Lobster for over a year as a Sous Chef. My role involves prepping for service, maintaining an excellent standard of food, and managing food hygiene & safety procedures.”
Lynn Mitchinson, Professional Cookery Lecturer and experienced Chef, said:
“Mikaela is an asset to New College Durham. She has shown commitment and determination to develop her skills to a high level. It is great to see her hard work has paid off!”
